Cucumber, Coriander & Skyr

Ingredients

1 cucumber
Garlic (optional)
1 tsp. salt
2 dl Nōrr Skyr
½ bunch of coriander

Peel and half the cucumber. Scrape out the seeds and grate it. Finely chop garlic after taste, season with salt. Now squeeze as much juice out of the cucumber with your hands as possible. Turn the cucumber, chopped coriander and garlic with skyr and finely grate lemon zest on top.

Serve this for roasted chicken or lamb, or try as a spread for sandwiches.
